Nutritional Information for Subway
Subway markets itself as the fresh, healthy fast food alternative. But how does the UK menu hold up under ingredient-level scrutiny? We analysed Subway's published nutrition data using NOVA classification — and the bread is where the story starts. In 2020, an Irish court ruled Subway's bread contained too much sugar to legally qualify as bread for tax purposes. The sauces add another hidden sugar layer. Here's what the numbers actually say.

The UPF picture at Subway
Subway's bread is the foundation of every sub — and it's firmly NOVA 4. All bread varieties contain emulsifiers, dough conditioners, and sugar levels that drew legal scrutiny in Ireland. The Italian White bread alone contains sugar, soybean oil, and yeast extract among its 20+ ingredients.
Sauces are the second UPF layer. The Sweet Onion sauce contains 34g of sugar per 100g — that's more sugar than many chocolate bars. Chipotle Southwest sauce is 41.3% fat. Even the Honey Mustard, which sounds wholesome, contains 16.5g of sugar per 100g.
The protein fillings (chicken breast, turkey, tuna) are cleaner — ranging from NOVA 2 to NOVA 3 — but the bread and sauce sandwich them in ultra-processed ingredients from both sides.
Lower-UPF ordering guide
For the lowest UPF exposure at Subway: choose a salad instead of a sub to avoid the bread entirely. Pick chicken breast, turkey, or tuna as your protein — these are the least processed fillings. For sauce, use olive oil and vinegar or skip sauce altogether. The Sweet Onion and Honey Mustard sauces are sugar-heavy; Chipotle Southwest is fat-heavy.
If you want a sub, the 6-inch Turkey Breast on any bread is the lowest-calorie core option. Load up on vegetables — all the salad items are NOVA 1. Avoid the Meatball Marinara (highest calorie filling at 229 kcal per serving with 14g fat) and the Chipotle Cheesy Bites sides.
