Understanding NOVA

The four NOVA categories

NOVA 1

NOVA 1 — Whole / Minimally Processed

Foods with no added substances. Includes fresh fruit, vegetables, eggs, meat, milk, grains, nuts, and seeds. May be dried, frozen, pasteurised, or fermented.

Examples: Fresh vegetables, eggs, plain oats, nuts, frozen fruit

NOVA 2

NOVA 2 — Processed Culinary Ingredients

Substances extracted from Group 1 foods or nature, used in cooking. Includes oils, butter, sugar, salt, flour, and starches. Rarely eaten alone.

Examples: Olive oil, butter, salt, sugar, flour

NOVA 3

NOVA 3 — Processed Foods

Group 1 foods with Group 2 ingredients added — salt, sugar, oil. Simple processing like canning, bottling, or fermenting. Still recognisable as the original food.

Examples: Canned vegetables, cheese, bread, smoked fish

NOVA 4

NOVA 4 — Ultra-Processed Foods

Industrial formulations with five or more ingredients, including substances not used in home cooking — emulsifiers, flavourings, modified starches, protein isolates, and colours.

Examples: Soft drinks, crisps, instant noodles, packaged snacks, reconstituted meat
