It depends on the product. Plain Quorn Mince scores NOVA 1 (unprocessed) with just four ingredients including mycoprotein. However, most Quorn products — nuggets, sausages, escalopes, and flavoured pieces — score NOVA 4 due to added flavourings, dextrose, emulsifiers, and preservatives like potassium sorbate. Why Quorn scores It depends
Quorn's base ingredient, mycoprotein, is a fermented fungal protein that is minimally processed. In products like Quorn Mince (300g and 500g), mycoprotein makes up 91% of the product, with just rehydrated egg white, pea fibre, and barley malt extract rounding out the ingredient list. These products score NOVA 1 — genuinely unprocessed.
The picture changes dramatically with Quorn's coated and flavoured products. Quorn Crispy Nuggets contain 22 ingredients including dextrose, milk proteins, wheat starch, raising agents (disodium diphosphate, sodium carbonate, ammonium bicarbonate), and natural flavouring. Quorn 14 Cocktail Sausages also have 22 ingredients, adding potassium sorbate as a preservative and rapeseed oil. These products score NOVA 4.
Under the NOVA framework, the addition of flavourings (even when labelled "natural"), industrial sugars like dextrose, preservatives such as potassium sorbate, and protein isolates like milk proteins all individually trigger a NOVA 4 classification. Avoid the coated products (nuggets, southern fried bites, escalopes, cocktail sausages) if minimising ultra-processing is your goal — these typically contain flavourings, dextrose, preservatives, and rapeseed oil. As a rule of thumb: the simpler the Quorn product, the cleaner it scores.
