No, coffee is not ultra-processed. Instant coffee, ground coffee, and whole bean coffee all score NOVA 1 under the NOVA classification system. At Tesco, every coffee product analysed — including Nescafe Gold Blend, Nescafe Original, Kenco Smooth, and Tesco own-brand — scored NOVA 1 with zero UPF markers. Coffee is simply roasted and ground (or spray-dried for instant), with no emulsifiers, sweeteners, or flavourings added.
Why Coffee scores NOVA 1 — Unprocessed
Coffee beans are a natural agricultural product. The processes involved in making coffee — roasting, grinding, and in the case of instant coffee, spray-drying or freeze-drying — are all classified as minimal processing under the NOVA framework. These are physical transformations that do not add any substances to the final product.
Nescafe Gold Blend lists its ingredients as soluble coffee and roast and ground coffee (3%). Nescafe Azera similarly contains soluble coffee and roast and ground coffee. These are single-ingredient or two-ingredient products with no additives whatsoever. Tesco own-brand instant coffees (Classic, Gold, Finest Colombian) are equally clean.
It is worth noting that this analysis covers plain coffee only. Coffee drinks, flavoured coffees, coffee syrups, and ready-to-drink iced coffees would likely score differently due to added sugars, flavourings, emulsifiers, and stabilisers. The distinction matters: a jar of Nescafe Gold Blend is NOVA 1, but a bottled Starbucks Frappuccino would almost certainly be NOVA 4.

What to look for when shopping
Plain coffee — whether instant, ground, or whole bean — is reliably NOVA 1. The danger zone is flavoured or mixed coffee products: anything labelled as a "latte", "mocha", "cappuccino mix", or "iced coffee" likely contains added sugars, milk powders, flavourings, and emulsifiers that would push it to NOVA 4. If you want to keep your coffee unprocessed, buy plain coffee and add your own milk and sugar.
