The refined wheat flour has had most of its fibre stripped away, meaning the starch converts rapidly to glucose in the bloodstream. Toasting bread slightly reduces the GI but not enough to change the risk category.
Processing level
Most sliced white bread sold in UK supermarkets is NOVA 3 or NOVA 4. Even basic own-brand loaves contain emulsifiers (e.g. mono- and diglycerides of fatty acids, E471), preservatives (calcium propionate, E282), and added sugars beyond what is needed for fermentation. Branded loaves like Warburtons add soya flour and various dough conditioners. A truly NOVA 1 bread would be flour, water, yeast, and salt — which is essentially sourdough or bakery bread, not the sliced loaves most people buy.

What to watch for when shopping
Almost all sliced white bread in UK supermarkets is NOVA 3-4. The cheapest option (Tesco Medium Sliced White at £0.74) is also the most ultra-processed. If you want to reduce glucose impact, switch to sourdough (lower GI due to fermentation) or pair bread with protein and fat to slow absorption. Wholemeal bread is marginally better (GI ~70) but still high. The only true NOVA 1 bread is fresh bakery bread made with just flour, water, yeast, and salt.
