Greggs is a UK cultural institution — over 2,400 stores making it the country's largest bakery chain. The Vegan Sausage Roll was a cultural moment. The UPF picture at Greggs
Greggs' core product — the Sausage Roll — is NOVA 4. The pastry contains wheat flour, margarine (with emulsifiers and colour), and the sausage meat filling uses rusk, preservatives, flavourings, and stabilisers. This is unsurprising for a mass-produced bakery item.
The Vegan Sausage Roll is even more processed than its meat counterpart. The filling uses a Quorn-based mycoprotein matrix with pea protein, vegetable oils, starch, methylcellulose, calcium chloride, and multiple flavourings to replicate the texture and taste of pork. It scores NOVA 4 with significantly more additive categories than the traditional roll.
Greggs' sandwiches are generally NOVA 3-4 depending on the filling — the bread is commercially produced with standard improvers, but fillings like egg mayo or chicken are relatively clean. The sweet range (doughnuts, cookies, cakes) is uniformly NOVA 4.
Lower-UPF ordering guide
For the lowest UPF exposure at Greggs: the sandwiches are generally cleaner than the bakes and pastries. An Egg Mayo Sandwich (317 kcal) or a Chicken & Bacon Baguette are among the least processed options — the bread is the main UPF marker, but the fillings are relatively clean.
Avoid the Vegan Sausage Roll if you're trying to minimise ultra-processing — despite the health halo, it's more heavily processed than the traditional Sausage Roll. The fresh fruit pots (when available) are the only genuinely NOVA 1 items. For coffee, a plain Cappuccino (94 kcal, regular) is clean; the flavoured lattes add syrups and sugar.
