It depends on the popcorn. Plain, unpopped corn kernels score NOVA 1 — just a whole grain. But most ready-to-eat popcorn at Tesco scores NOVA 4 (ultra-processed) because of added emulsifiers like lecithins and rapeseed oil. Even "salted" popcorn contains these industrial additives. These emulsifiers are used to ensure even coating and prevent clumping during production.

The most processed end of the spectrum includes toffee and flavoured popcorn. Butterkist Toffee Popcorn contains 10 ingredients including glucose syrup, cane molasses, and partially inverted sugar syrup — three different sugar aliases alongside lecithins as an emulsifier. Propercorn Sweet & Salty contains rapeseed oil and demerara sugar. Even brands marketed as premium or healthier still rely on rapeseed oil and emulsifiers in their pre-popped products.

The simplest way to eat non-ultra-processed popcorn is to buy plain kernels and pop them yourself in a pan with a little butter or olive oil.
