The ingredient lists are short — typically flour, water, sourdough culture, and salt — with no emulsifiers, preservatives, or flavourings. The one exception is Jason's Tiger Rolls, which contain dextrose and rapeseed oil, pushing them to the NOVA 4 boundary.
Why Jason's Sourdough scores NOVA 3 — Processed
Jason's is one of the cleanest bread brands on Tesco shelves. Their core sourdough range uses genuinely simple ingredients: wheat flour, water, sourdough starter (or rye sourdough), and salt. Products like the No. 01 Great White contain just 5 ingredients, while the Ciabattin breads have only 4. None of these contain emulsifiers, preservatives, flavourings, or any other UPF markers.
The brand scores NOVA 3 rather than NOVA 1 because the bread is a processed food — it has been baked, and in some cases contains added ingredients like olive oil or seeds. But crucially, every additive is a recognisable kitchen ingredient. There are no E-numbers, no calcium propionate, and no mono- and diglycerides of fatty acids — the additives that push most supermarket bread into NOVA 4.
The only product in the Jason's range that approaches ultra-processed territory is the Everyday Tiger Rolls with Sourdough, which contains 15 ingredients including dextrose (an industrial sugar) and rapeseed oil. This scores "Likely NOVA 4" with 2 UPF markers. However, this is an outlier — the rest of the range is consistently clean.

What to look for when shopping
Jason's sourdough is a safe choice if you want to avoid ultra-processed bread. Look for products in the "Sourdough & Rye" category with short ingredient lists (4-8 items). The Tiger Rolls are the one exception to watch — they contain dextrose and have 15 ingredients. As a general rule, any Jason's loaf or ciabattin with fewer than 10 ingredients will be NOVA 3 or better.
