Nutritional Information for Eggplant (Aubergine)

Eggplant — known as aubergine in the UK — is one of the lowest-calorie vegetables available, at just 20 kcal per 100g. From a SpikeSaver perspective, it is essentially glucose-neutral: very low carbohydrates (2.2g per 100g), a very low GI, and zero processing in its whole form (NOVA 1). What to watch for when shopping

Whole aubergines are always NOVA 1 and glucose-safe. The watch-point is prepared dishes: Tesco Finest Roasted Aubergine Bake jumps to 120 kcal/100g (6x the raw vegetable) due to added oils, and Patak's Aubergine Pickles hits 381 kcal/100g with 25g fat and 35g carbs per 100g. If buying whole, Tesco Aubergine Each at £0.95 is the best value. Note: in UK supermarkets this vegetable is always labelled 'aubergine' — the term 'eggplant' is used in American, Australian, and international contexts.
