Why Gammon scores NOVA 3 — Processed

Gammon is a cured pork product, and curing inherently places it in at least NOVA 3 (processed). The simplest gammon products — like Tesco Unsmoked Gammon Steaks — contain just four ingredients: pork (87%), water, salt, and preservatives (sodium nitrite, potassium nitrate). This is straightforward curing, the same process used for centuries.

The picture gets more complicated with boneless gammon joints. Tesco Smoked Boneless Gammon Joint contains dextrose — an industrial sugar used in the curing process. While the quantity is small, dextrose is an industrial additive that pushes the product towards NOVA 4 under strict interpretation. The unsmoked boneless version also contains dextrose.

Glazed gammon products add another layer of processing. Tesco 2 Gammon Steaks with BBQ Glaze has 16 ingredients including sugar, treacle, cornflour, colour (plain caramel), and smoked water.
